This is one of my favourite ways to prepare salmon. It is effortless and SO flavourful and goes well with any side. You basically just need a nice fatty cut of fresh salmon, a whack of spices, some lemon and a drizzle of honey. My favourite way to do this is on a cast iron placed on the BBQ but you can also do it on a cookie sheet in the oven.

INGREDIENTS
4 60z pieces of salmon (I actually used 2 12oz then cut in half when done)
juice of 1 lemon
drizzle of honey
Spice rub
1 tbsp paprika
2 tsp smoked paprika
2 tsp garlic powder
1 tsp onion powder
1 tsp oregano
1 tsp chili powder
1/4 tsp cayenne or chipotle chill powder
1/2 tsp salt
1/2 tsp freshly cracked black pepper
Directions
Pre heat BBQ to 500' with a cast iron skillet on it or alternatively preheat oven to 425' and prepare a cookie sheet with parchment and set aside.
Mix together all your spices.
Pat salmon dry with a paper towel and season with salt and pepper. Squeeze half a lemon over salmon and a drizzle of honey. Sprinkle spice mixture evenly over the salmon ensuring its sticking by pressing all over the top and sides.
Place in the sizzling hot cast iron and close the BBQ lid and cook for 15-25 mins depending on the thickness of your salmon. Remember it will continue to cook as it rests. It is ready when it easily flakes away if you poke with a fork.
Alternatively place on the prepared cookie sheet and bake for 15-25 mins in the oven.
Once ready, Squeeze with remaining half a lemon and another drizzle of honey.
Serve with side of choice.
Tips
I love making this into salmon tacos. Flake salmon with a fork and serve on a platter with corn tortillas, shaved cabbage, avocado and lime wedges.
