INGREDIENTS
1 large red onion - thinly sliced
⅓ cup apple cider vinegar
1 tbsp honey, maple syrup or sugar
1 tsp sea salt
DIRECTIONS
In a small saucepan over medium heat, combine vinegar, honey, salt + a half cup of water. Simmer and stir until salt and honey are dissolved.
Place onion in a glass jar, pour vinegar mixture over. Secure lid and allow to sit at room temperature until cooled.
Store in fridge for 1-2 weeks.
TIPS
I love adding the juice to salad dressings rather than throwing it away!
